Hu Hsien Amaranth, also known as Chinese Spinach or Joseph’s Coat, is a stunning variety of Amaranthus tricolor renowned for its vibrant, tri-colored leaves in shades of green, yellow, and crimson. Originally from Asia, it is grown both as a nutritious leafy green and as an eye-catching ornamental plant. Young leaves have a mild, spinach-like flavor and can be used in salads, stir-fries, or soups. This heat-tolerant plant is an excellent addition to edible landscapes, garden borders, or containers.
Growing Instructions
1. Sun Requirements: Full sun (6+ hours daily).
2. Soil Requirements: Prefers well-draining, fertile soil with a pH of 6.0–7.5. Amaranth tolerates poorer soils but performs best when compost or organic matter is added.
3. Watering: Keep soil consistently moist, especially during germination and early growth. Avoid waterlogging.
4. Planting Depth: Sow seeds on the surface of the soil and lightly press down. Do not bury, as seeds require light to germinate.
5. Spacing: Thin seedlings to 10–12 inches apart for optimal growth. Rows should be spaced 18–24 inches apart.
6. Temperature: Germination occurs best at 70–85°F. Ideal growing temperatures range from 65–90°F.
7. Harvesting: Harvest young leaves as needed once plants reach 6–8 inches tall. For ornamental use, allow plants to fully mature to enjoy their vibrant coloration.
Stratification & Germination
Hu Hsien Amaranth seeds do not require cold stratification. They are warm-weather seeds and germinate best when directly sown in late spring after the last frost, or started indoors 4–6 weeks before the final frost date. Germination occurs within 5–10 days.
Additional Tips
• Fertilize sparingly with a balanced organic fertilizer if growth slows.
• Deadhead flowers to encourage prolonged leaf production, or allow some to go to seed for ornamental value or seed saving.
• Watch for pests such as aphids and flea beetles, and use organic solutions if necessary.
