Full Description

Green Fennel (Foeniculum vulgare) is a fragrant, feathery-leaved culinary and medicinal herb known for its sweet, anise-like aroma and soft, airy texture in the garden. It produces tall, graceful stems topped with golden umbels that attract beneficial pollinators throughout the growing season. The leaves, stems, seeds, and pollen are all edible, and the plant is widely valued for digestive support, calming properties, and traditional herbal uses. When grown and harvested young, it offers a delicate, mild licorice flavor perfect for teas, seasoning, salads, roasted dishes, and herbal blends. Green Fennel is easy to grow, fast to mature, and adds both ornamental beauty and practical usefulness to herb gardens, cottage gardens, and culinary plantings.

Full Growing Information From Seed:

  • Sow seeds directly outdoors or start indoors in early spring.
  • Press seeds lightly into the soil; do not bury deeply.
  • Maintain consistent moisture until germination.
  • Germination typically occurs in 7–14 days in warm conditions.
  • Thin seedlings to allow strong, upright growth.
  • Provide full sun and well-drained soil for best flavor and plant health.
  • Water regularly during establishment; once mature, fennel is fairly drought-tolerant.
  • Harvest leaves anytime when plants are vigorous; harvest seeds when the flower heads dry.
  • Avoid planting too close to dill, as cross-pollination may alter flavor.
  • Leave some seed heads to mature if you want the plant to self-sow naturally.

Stratification: Not required

Fennel seeds do not need cold stratification and germinate readily without pre-treatment.

Medicinal Properties:

Yes. Green Fennel has traditional medicinal uses, particularly for:

  • Digestive support (gas, bloating, discomfort)
  • Soothing teas for mild cramping
