Kangkong Spinach, widely known as Water Spinach, is a semi-aquatic, herbaceous tropical plant grown as a vegetable for its tender shoots. I. aquatica is generally believed to have been first domesticated in Southeast Asia and is widely cultivated in Southeast Asia, East Asia, and South Asia. The tender leaves are flat, and are long, narrow and arrow-shaped measuring approx. 1 to 2.5 cm wide and 20to 30 cm long. 

Kangkong is a rich source of various vitamins, minerals and antioxidants and also contains potassium and iron. The nutrients in Kangkong is almost equal to milk, banana and orange and is believed to reduce blood pressure, provides immunity to cancer, improves vision, boosts overall immunity, and is used to treat skin diseases.

  • Direct sow seeds outdoors after risk of frost has passed; sow seeds 1/8 in deep, 10 seeds per 30cm (12 in), in rows 30 to 45cm (12 to 18in) apart. Thin to at least 5 to 8 cm (2 to 3 in) between plants, or further if you want larger leaves. If you use the closer spacing, thin when the leaves touch, when the plants are about 2in tall, use the tender leaves for salad greens.
  • Optimal soil temperature: 5 to 20°C (45 to 70°F). 
  • Germinates in 7 to 14 days.
  • OR start seeds indoors; lightly pre-moisten the soil and fill the container. Sow seeds 1/8 in deep. For faster germination, place the container in a warm location and cover with plastic. Remove the plastic once per day to let excess moisture escape and prevent damping off. Keep the container lightly moist by misting. Transplant seedlings outdoors when all risk of frost has passed.
  • Harvest: Harvest before it blooms, between 30 to 45 days. Leaves and stems can be trimmed as needed as long as a minimum of 3 in of the plant remains as it will regrow.
