Patty Pan, also called Scallop Squash, is a beautiful small round and shallow shaped summer squash with scalloped edges, making it quite the festive table decoration! The taste is quite mild. Scallop Squash usually grows as a bush or semi-bush about 3-4 ft wide and 24 in tall; unlike winter squash, these compact plants won't take up as much room. Most patty pan squash plants start to produce fruits about 45-55 days after planting, and harvests continue for many weeks thereafter.
Pattypan squash comes in white, yellow, orange, light green, dark green, and multicolored varieties.This variety is known as Bennings Green Tint Scallop Squash, and is most tender when immature. Scoop out the tender flesh and mix it with flavorings such as garlicand use the empty shell for the container!
Pattypan is a good source of magnesium, niacin, and vitamins A and C. One cup contains approximately 20 to 30 calories with no fat. It is often sliced, baked, or coated and fried until golden brown, and or simply boiled. Can also be pickled.

- Start seeds indoors 3-4 weeks before the last frost in spring. Sow seeds ½ to 1 in (1.3-2.5 cm) deep.

- Seeds need warmth to germinate and the plants are extremely frost tender.
- Spacing: space 45-60 cm (18-24 in) apart in rows 90-120 cm (36-48″) apart.
- Avoid planting root crops, such as beets, onions, and potatoes, near squash, as these plants may disturb sensitive squash roots when harvested.
- Containers: Pattypan can be grown in a container for one single squash plant; roots are relatively shallow, best to choose a wide planter that is about 12 in (30 cm) deep.

- Harvesting for seeds: allow the squash to ripen until it's almost but not quite rotting. Then be sure to separate the flesh from the seeds; allow seeds to dry before planting. Select the largest, most mature seeds to plant.
