Calabaza squash is a winter squash, and harvested in the summer, but reaches its peak in the fall and winter months. This winter squash (pumpkin) variety has a rustic light brown color, with a rich deep orange fruits and a hard skin; each fruit weighs in at about 15 to 20 pounds at full maturity. The rinds are brown, with deep ridges overall.

This winter squash is also known in France as Musquee de Provence or Fairytale Squash, and has very vigorous lengthy vines, growing sometimes up to 50 ft in length.

The flesh is perfect to make your Calabaza en tacha, Mexican candied pumpkin and creamy pumpkin pie filling, and is considered one of the best tasting squashes as they are sweet and delicious. Slow roasting is the perfect method for bringing out all the deep deliciousness of this variety.
