White Detroit beet plants produce good yields of beautiful large white beets. Also known as sugar beets for their high sugar content, they are an excellent choice for home gardens and an excellent addition to gourmet dishes. White beets are the mildest, sweetest, and least earthy-tasting of all beet varieties due to the fact that they lack betalain, the compound responsible for the pink and yellow pigments found in red and golden varieties; this also indicates that white varieties have a higher sugar content than their more colorful ones.

White beets can be eaten raw and are delicious grated, and will add a little bit of color and extra crunch to salads, sandwiches, or grain bowls! Raw beets also great to pickle, and eating them raw means they don't lose any of the water-soluble nutrients when boiled. White beets do not have a strong earthy taste as much as red beets do, and white beets do not bleed their color. White beets can be picked at varying sizes but maintain their sweet, mild flavor and firm texture even if they are grown larger.

  • Full sun (min 6 hours daily)
  • Soak seeds overnight
  • Start seeds indoors 4 weeks prior to last frost; plant 1 cm (½ in) deep, 5-10 cm (2-4 in) apart. For uniformly sized beets, thin carefully to 7-15cm (3-6 in) apart when seedlings are 5cm (2 in) tall. Eat thinned plants, roots and all.
  • Transplant in early spring when seedlings are strong and after frost danger has passed; spacing 1 cm deep
  • Direct seed 1 cm deep and 2 to 4 cm apart when frost danger has passed in rows 30-45 cm (12-18 in) apart.
  • Germinates in 8 days.
  • Days to Maturity: 55-60.
  • This is a second early variety with a large root, and has a dark red flesh.
