TARRAGON French (Artemisia dracunculus), also known as estragon, is an upright and woody based species of perennial herb in the family Asteraceae; it is widespread in the wild across much of Eurasia and North America and is cultivated for culinary and medicinal purposes and prized for its narrow lance-shaped, aromatic 3 to 4 in. long (7 to 10 cm) leaves that are great fresh and/or dried.

French tarragon has a pungent taste similar to licorice, due to the presence of estragole, an organic compound that gives fennel, anise and tarragon their distinct flavours; tarragon is the perfect flavouring for fish and poultry dishes.  In Italian, the name is dragoncello, a reflection of the fact that in medieval days tarragon was known as the dragon herb. Antimicrobial elements enable tarragon to kill intestinal worms. Tarragon also increases circulation, which helps distribute nutrients, oxygen, hormones and enzymes to tissues and remove toxins.

  • 6-8 weeks before last frost, cover seeds lightly, germinate at 20C. Plant out after frost danger.

  • OR start seeds indoors; just cover the seeds lightly (or with vermiculite) and provide a soil temperature of 20°C (70-75°F).
  • Seed germination takes 5 to 15 days. Plants require all-day sunshine and will grow anywhere tomatoes, peppers or basil will grow
  • Germination: seeds should sprout in 4 to 14 days. The seedlings are somewhat prone to damping off; transplant the seedlings out in May when they are strong enough to handle.
