Dames Sweet Rocket, also known as Hesperis. Plants produce flowers ranging from pink, purple and white, and have a lovely evening fragrance similar to cloves. Flowers also edible but have a bitter taste that gives a zing to salads.
Pick young leaves before the flowers appear as they are edible and are highly nutritious and can be used in salads, or as a cress substitute; leaves have a bitter slightly mustard flavour. Seeds can be sown in trays or directly into a prepared seedbed in the garden once all risk of frost has passed. The ideal sowing period is March to May, although seed can be sown in Autumn for over-wintering.

- Sow seeds directly after the soil begins to warm in the spring.
- OR, start indoors; sow seeds on the surface of the soil in a flat. Keep the soil moist and at a temperature of 70-75 F until germination, which usually occurs within 21-30 days. Transplant outdoors after all risk of frost has passed.
